Comfort food

I have never had very good potato soup. The stuff I have eaten before was like potatoes in chicken broth. OK....but not very good. I'd rather just have a baked potato. However, it is fall and I think comfort food starts calling our name this time of year. I was thrilled when I made this recipe and liked it, but don't make this on a day when you're counting calories...it's full of them!! You can use low fat in it though and it's fine.

Potato Soup

4 baking potatoes (about 2 1/2 pounds)
2/3 c. flour
6 c. milk
1 cup sharp cheddar cheese
1 t. salt
1/2 t. pepper
1 c. sour cream
3/4 c. chopped green onions
6 bacon slices, cooked & crumbled


Bake your potatoes. You can peel them if you wish after you bake them. I keep the skin on, but cut off any bad parts. Coarsely mash. Put flour in a pan, add milk, stirring with a whisk until blended. Cook over medium heat until thick and bubbly (about 8 minutes). Add mashed potatoes, 3/4 c. cheese, salt, and 1/2 t. pepper, stirring until cheese melts. Remove from heat.

Stir in sour cream and 1/2 c. onions. Cook over low heat 10 minutes or until thoroughly heated (do not boil). Sprinkle additional cheese, onions, and bacon over individual servings for garnish. Yummy!!
